Ingredients
- ¾ cup low-fat cottage cheese
- 1 egg
- 4 Tbsp pumpkin purée
- 3 Tbsp monk fruit sweetener
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Sugar-free whipped cream, to taste
Instructions
- Blend all the ingredients until smooth.
- Divide the mixture evenly into 3 ramekins.
- Bake at 350°F for 15 minutes.
- Chill before serving.
- Top with sugar-free whipped cream and a sprinkle of cinnamon.
Yield: 4 servings of protein and ¼ serving of complex carbs per portion.
