Cheesecake made with Pumpkin Protein

Ingredients

  • ¾ cup low-fat cottage cheese
  • 1 egg
  • 4 Tbsp pumpkin purée
  • 3 Tbsp monk fruit sweetener
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Sugar-free whipped cream, to taste

Instructions

  1. Blend all the ingredients until smooth.
  2. Divide the mixture evenly into 3 ramekins.
  3. Bake at 350°F for 15 minutes.
  4. Chill before serving.
  5. Top with sugar-free whipped cream and a sprinkle of cinnamon.

Yield: 4 servings of protein and ¼ serving of complex carbs per portion.
